Talking to Josep Roca about wine is experiencing the poetry and wines of the Valencian Community. As he himself acknowledges, they are gaining creativity and innovation and winemakers are worrying about recovering local varieties such as Bobal, Meseguera or Giró. In fact, he confirms that “this is probably the best moment for Valencian wines . ”

-How do you value the work that the Valencian wineries are doing?
– They are in a very sweet moment in creativity and innovation, of returning to the past, of recovering local varieties and of exalting grapes such as Bobal, Merseguera or Giró. Furthermore, there are different realities in the Valencian Community that range from very precise vitifications to airs of freedom, a sense of movement, curiosity, growth and conceptual maturity.
In short, it is an area in which we can observe the Mediterranean coast with many lights and very few shadows and with the ability to show and breathe the Mediterranean in the bottle. In my opinion, it is probably the best moment of Valencian wines.

– Despite the moment we are experiencing as a result of the pandemic…

For the design of the new establishment, which has an area of ​​480 square meters divided between the room and the terrace and a capacity for 220 diners, the interior design studio of Sandra Tarruella has been involved, which has maintained the Mediterranean line that the previous establishments already have. creating a space with a fresh and at the same time comfortable atmosphere.

– Wines with less aging and fewer barrels are becoming fashionable. What is your opinion of these wines?
– We could say that sometimes less is more. It is true that from the Mediterranean we have sought an approach to wines with a more Atlantic style, packaging and volume and with very long aging. It is also true that the Mediterranean allows you to make wines that have a directness, a purity of style and a delicacy. Furthermore, there are grapes like Mandó that do not ask for power, Forcallà or Verdil that show us that there is another way, taking into account that the Mediterranean is lightness and at the same time containment and that youth does not mean that it is a small wine. but it has to be an accessible wine but we also have to think that it is a very interesting way to bring it closer to the cuisine that represents the entire Valencian Community.
